Hungarian Filled Cookies

5 1/2 to 6 cups flour
1/2 cup sugar
1/2 teaspoon salt
1 1/2 tablespoons baking powder
1/2 pound butter
3 sticks margarine
2 egg yolks
1 whole egg
1/2 pint sour cream
2 teaspoons vanilla
Apricot or nut filling


Preheat oven to 375° F.

Combine flour, sugar, salt and baking powder and mix well.

Add butter and margarine and rub into flour mixture with fingers.

Make a well.

Beat with a fork egg yolks, egg, sour cream and vanilla.

Add to well in flour and mix. It will be consistency of pie dough.

Roll out and cut into circles.

Spread apricot or nut filling in the center of dough circles. Fold two sides over to meet or overlap slightly in center.

Brush with beaten egg yolk and milk.

Bake 9 to 10 minutes in 375 degree oven until nicely browned.

Tip: Touch each side of circles that meet in center with egg or water and press together - otherwise cookie opens up when baking.

Pinch together firmly after wetting both sides.

To make the nut filling: combine 1 1/2 cups ground walnuts, 3/4 cup sugar, 1 1/2 teaspoons almond or vanilla extract and 3 stiffy beaten egg whites.

Also can purchase fruit fillings in bakery supply store.

Can also used apricot preserves mixed with finely ground walnuts and it holds up very well.
