Jelly Gems

1/2 cup butter
1/4 cup packed brown sugar
1/4 cup sugar
1 egg
1/2 tsp vanilla
1/2 cup sourdough starter
2 cups flour
4 oz jelly or jam


In a large bowl, cream together the butter, sugar and brown sugar. Beat in the egg and vanilla extract until the mixture is fluffy. Stir in the sourdough starter and flour. Flour your hands and shape the dough into a roll. Wrap it in waxed paper, plastic wrap or foil. Refrigerate for at least 2 hours. It is better if left overnight.

Grease a large baking sheet and set it aside. Preheat the oven to 400o.

Cut the chilled dough into 1/4 inch slices. Refrigerate the unsliced dough. Arrange the slices 2 inches apart on a greased baking sheet. Press your thumb into the center of each slice. Spoon 1/2 tsp of jelly or jam into the indentation. Bake in the preheated oven for 8 to 10 minutes. Remove from baking sheet and cool on a wire rack. Clean and grease baking sheet before reusing.

This is the recipe can be used for making stain glass cookies. To make them, crush hard candy, such as lifesavers or Brach's candy balls. Cut shapes from a thin cardboard. Line a large baking pan with aluminum foil. Outline the shapes on the cardboard patterns. Grease the foil.

Roll the dough to about half the thickness of a pencil and follow the outlines on the foil, making sure to seal the ends together. Spoon the crushed candy into the shapes. Bake in an oven preheated to 350o for 8 to 10 minutes. Allow to cool for 5 minutes before carefully removing from pan. Cool on a wire rack.
