Rolled Cookies Puff Up Tea Cookies

Puff Up Tea Cookies

2 cups all-purpose flour
1/4 teaspoon salt
1/8 teaspoon cream of tartar
3/4 cup butter
1 teaspoon vanilla
1/2 cup heavy cream, plus some to brush on top of cookies
sugar
cinnamon (optional)


Preheat oven to 450º.

Sift together, flour, salt and cream of tartar into large bowl.

Cut in butter until particles are size of small peas.

Combine vanilla and cream. Sprinkle over flour mixture, stirring with fork until dough is moist enough to hold together. Form into a ball.

Roll out on floured surface to 1/3 to 1/4 inch thickness. Cut into desired shapes with a cookie cutter or pastry wheel.

Place on ungreased baking sheets.

Chill until firm, at least 30 minutes.

Brush tops of chilled cookies with cream, then dip in sugar. If desired, a little cinnamon may be mixed with sugar.

Bake 7 to 10 minutes until delicately browned.
