Sand Tarts with Pecans
1 cup butter
1/2 cup confectioners' sugar
2 cups sifted cake flour
1 cup chopped pecans
1 teaspoon vanilla
In a large mixing bowl with an electric mixer, cream butter and 1/2 cup confectioners' sugar. Mix in flour, pecans, vanilla and salt.
Roll into balls or shape into crescents. Place on ungreased cookie sheet.
Bake in a preheated 325-degree oven for 20 minutes, or until very lightly browned. While cookies are still warm, roll in additonal confectioners' sugar.
