Sugar Cookie Classics

1/2 cup (1 stick) butter or margarine, softened
1 cup sugar
1 egg
1 3/4 cups all purpose flour
1/4 tsp. salt (I omit)
1 teaspoon vanilla or 1/2 teaspoon almond extract

Preheat oven to 325 degrees.

Cream butter and sugar until light and fluffy. Beat in one egg. Mix in flour, salt (if used) and vanilla to make a smooth dough.

Roll dough out 1/8 inch thick on well-floured surface. Use cutters to cut desired shapes. Sprinkle with colored sugars before baking, if desired. Bake 8 minutes until set and pale brown. Lift cookies off sheet with spatula while still warm.
