Sugar Cookies – Wheat Free
Free of wheat, milk, eggs, corn, soy and yeast
3 c barley flour or 3 c + 2 tbsp spelt flour
1/2 c sugar or 3/8 to 1/2 tsp white stevia powder
1/2 tsp baking soda
1/8 tsp unbuffered Vitamin C crystals
1/2 c oil
1/2 c water
Combine dry ingredients. Combine the water and oil, stir to mix thoroughly. Add to flour mixture before they separate. Mix dough with a spoon, then with your hands until the flour is worked in. You may add 1 to 2 additional tbsp water if the dough is too stiff.
Roll on a well floured board to about 1/4" thickness. Cut into shapes, sprinkle with additional sugar.
Bake at 350 for 15 to 20 minutes for the barley flour, or 10 to 15 minutes for the spelt flour, or until cookies begin to brown.
Stevia sweetened cookies will not brown very much but will feel dry to touch. Makes 2 1/2 to 3 dozen cookies.
