Sugar Cookies (Wheat Free)
3 cups barley flour or 3 cups and 2 tbsp. splet flour
1/2 cup sugar or 3/8 to 1/2 tsp. white stevia powder
1/2 tsp. baking soda
1/8 tsp. unbuffered Vitamin C crystals
1/2 cup oil
1/2 cup water
Combine dry ingredients in a bowl. Stir the water and oil together to mix well, then add to dry ingredients before they separate. Mix with a spoon, then with hands, until all of the flour is mixed in. If the dough is too stiff, you may add 1 to 2 tbsp of water.
Roll dough on a floured board to just under a 1/4 inch thickness. Cut into shapes and sprinkle with additional sugar if desired.
Bake at 350 for 15 to 20 minutes for the barley flour, 10 to 15 minutes for the spelt flour - the cookies should begin to brown.
The stevia cookies will not brown much but will feel dry to the touch. Makes 2 1/2 to 3 dozen.
Made with listed ingredients, recipe is free of wheat, milk, eggs, corn, soy and yeast. Using stevia also makes it free of refined sugar.
