Tropic S'prizes
2 cups all-purpose flour
1/3 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup butter
1/4 cup shortening
1 egg
1 to 2 tablespoons milk
1/2 teaspoon vanilla
1/4-cup pineapple preserves
1/4-cup semi sweet chocolate bits
1/4 cup walnuts, chopped
confectioners' sugar
Preheat oven to 400º. Grease baking sheet.
Sift together in large mixing bowl, flour, sugar, baking powder, soda and salt.
Add butter and shortening. Mix with low speed of mixer until mixture resembles coarse crumbs.
Blend in egg, milk and vanilla. Mix well to form dough. If desired, chill dough for easier handling. Dough may be stored in refrigerator up to 3 days and baked as needed.
Divide dough into three parts.
Roll out one part on floured surface to a 12x4-inch rectangle.
Spread with pineapple preserves. Sprinkle with chocolate bits and walnuts.
Roll tightly as for jellyroll, starting with 12-inch side; seal edges and ends.
Place seam-side down on greased baking sheet. Repeat with remaining dough.
Bake in 400º oven 15 to 17 minutes. Cool; slice
