Wafers for Ice Cream Sandwiches
1 package chocolate cake mix
1/4 c. shortening
1/4 c. butter or margarine - softened
1 egg
1 TB water
1 tsp vanilla
1/2 gallon ice cream
In mixing bowl, combine cake mix, shortening butter egg water & vanilla; beat till blended. Divide into 4 equal parts.
Between wax paper, roll one part into a 10x6" rectangle. Remove one piece of wax paper and flip dough onto ungreased bake sheet. Score dough into eight pieces, 3 x 2 1/2". Repeat with remaining dough.
Bake 350 degrees for 8-10 min. or till puffed. Immediately cut along scored lines and prick holes in each piece with fork; cool on bake sheets.
Cut ice cream into 16 slices, each 3 x 2 1/2". Place ice cream between two chocolate cookies; wrap in plastic wrap. Freeze on baking sheet overnight. Store in airtight container.
