White House Gingerbread Cookies
1 cup molasses
1 cup buttermilk
1 Tablespoon ground ginger
8 Tablespoons shortening
3 cup flour
1 taspoon baking soda
Preheat oven to 375° F/190° C.
Melt molasses, shortening and ginger together and blend.
Beat 10 minutes by hand, or 3 to 4 minutes with electric beater.
Dissolve baking soda in tablespoon of boiling water and add to molasses mixture, mix thoroughly and add flour, folding in just enough to make a good stiff batter which can be rolled.
Use enough flour on board to keep dough from sticking and roll to about 1/4" thickness.
Bake in preheated moderate oven (375ºF, 190ºC) for 10 to 12 minutes.
Makes approximately 5 dozen cookies.
