Brown-Edge Cookies

1 c butter or margarine, at room temperature
1 tsp vanilla
1 c brown sugar
2 eggs, beaten
3 c sifted flour
1/4 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Stir butter with vanilla, brown sugar and eggs until well mixed. Sift dry ingredients together. Work into butter/egg mixture. Form into a roll 2 inches thick. Wrap in aluminum foil and refrigerate 2 hour or until very firm.
Slice very thin using a sharp knife. Place 2 inches apart on an oiled baking sheet.
Bake at 375 for 7 minutes, or until browned on edges but still light in the center. Cool.
Kept in a tightly closed tin container, these cookies will stay fresh 2 weeks. Makes 5 dozen.
