4 eggs
1 1/2 cups sugar
16 ounces semisweet chocolate, melted and cooled
1/4 cup unsalted butter, softened
1 Tablespoon vanilla
1 Tablespoon espresso coffee
1/2 cup cake flour
1/4 teaspoon salt
1 teaspoon baking powder
2 1/2 cups chocolate chips
1 cup walnuts, chopped
In bowl of mixer, beat eggs and sugar for 4-6 minutes or until mixture is thick and pale.
Add melted chocolate, butter, vanilla, brewed espresso, flour, salt and baking powder. Beat mixture on lowest setting until it is combined well.
Add chips and walnuts and beat dough to mix well.
On a sheet of parchment paper form dough into a log, 4 inches in diameter, wrap in paper and chill for 3 hours.
Preheat oven to 350.
Cut log into 1 inch thick rounds. Arrange rounds 2 inches apart on baking sheets lined with parchment paper.
Bake in batches in middle of oven for 15 minutes, or until tops are shiny and cracked slightly. cookies will be soft.
Transfer baking sheets to racks and let cookies cool completely
before
removing from sheets. cookies will firm up as they cool
