Pinwheel Cookies
1.75 cups flour
.5 tsp baking powder
.5 tsp salt
.5 cup margarine
.75 cup flour
2 tsp vanilla
1 egg
1 oz. Unsweetened baking chocolate, melted
Sift dry ingredients together.
In mixing bowl, cream margarine, then add sugar, vanilla and egg and mix well. Add dry ingredients and mix until well combined. Divide dough in half and add chocolate to one part of dough. Chill well.
FORM cookies: Roll half of vanilla dough to one quarter" thick rectanle. Roll half of chocolate dough to equal sized
rectangle. (Rolling dough between pieces of waxed paper works well.) Place chocolate dough atop vanilla and roll
into a pinwheel - place long edge towards you and roll away from you. Wrap in waxed paper. Repeat with remaining dough. (Putting the vanilla on the outside lets you see how the cookies are browning when you bake them - otherwise you might burn them.)
To bake: slice one eighth " thick and bake in preheated 350 oven for 8 to 10
minutes.
