Raspberry Swirl cookies
1/2 c. butter, softened
1 c. sugar
1 egg
1 t. vanilla extract
2 c. all-purpose flour
1 t. baking powder
1/4 t. salt
Cream butter and gradually add sugar, beating well at medium speed with electric mixer. Add egg and vanilla and
beat well. Combine flour, baking powder and salt. Add to butter mixture, beating will.
Shape into a ball and wrap in plastic wrap. Chill 2 hours. On floured wax paper, roll dough to form a 12x9 rectangle. Spread with filling (recipe follows) evenly to within 1/2" of edges. Roll up dough, starting a long end and peeling wax paper as you go.
Pinch side seam to seal, leave ends open. Roll in plastic wrap. Chill 1 hour. Unwrap and cut into 1/4" slices. Place on greased cookie sheet and bake 8-10 min. @ 375. Cool on wire racks.
Raspberry filling
1/2 c. raspberry jam (I use seedless)
1/2 c. flaked coconut
1/4 c. finely chopped walnuts
Mix well.
