Lemon Melt-Aways

Cookies:
1 1/4 cups flour
3/4 (1 1/12 sticks) butter, softened
1/2 cup cornstarch
1/3 cup confectioners' sugar
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice

Lemon Frosting:
3/4 cup confectioners' sugar
1/4 cup (1/2 stick) butter, softened
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice


For the cookies, combine the flour, butter, cornstarch, confectioners' sugar, lemon zest and lemon juice in a mixing bowl. Beat at low speed for 2 to 3 minutes or until well mixed. Scrape down the sides of the bowl often while beating.

Turn the dough onto a work surface. Divide in half and shape each half into an 1x8 inch roll. Wrap each roll in plastic and chill for 1 to 2 hours or until firm.

Cut each roll into 1/4 inch slices. Place the slices 2 inches apart on cookie sheets. Bake at 350 degrees for 8 to 12 minutes or until set. The cookies will not be brown. Remove to a wire rack and let cool.

For the frosting, combine the confectioners sugar, butter, lemon zest and lemon juice in a small mixing bowl. Beat at medium speed for 1 to 2 minutes or until fluffy. Scrape down sides of the bowl often while beating. Frost the cooled cookies.

Makes about 5 dozen cookies.
