This is the English Recipe that was Ann Bolin's Favorite.
The recipe was supposedly kept secret until the late 1800's or the very early 1900's. An English woman who does our High Tea Classes gave us this recipe. It is VERY good and one you will make over and over again.
Maids of Honor
1 dozen unbaked tarts you can use pillsbury pie dough and using a 2" cutter cut circles to
make tarts
1/4 c butter at room temp
1/4 c granulated sugar
1 egg
2 t brandy flavoring or brandy
1/2 c flour
3 T powdered sugar
seedless raspberry jelly
Preheat oven to 350.
In tart shells (use a mini muffin pan (it is better)place 1/2 t raspberry jelly in botton of shell. NO MORE..it will seep through.
In a medium bowl cream butter sugar until light and fluffy. Beat in the egg and stir in the brandy flavoring. Gently and throughly fold in flour.
Spoon mixture into pastry shells.
Bake for 20 to 30 minutes or until pastry is browned and filling springs back when lightly touched. Carefully remove from pans and cool on wire rack. Dust with powdered sugar before serving and when cool.
