Hearty Beef and Barley stew
1 lb stewing beef cut into large chunks
1 cup dried lima beans
1 cup pearl barley
1 large onion, diced into large pieces
2 carrots cut in large dice
2-3 stalks celery cut in large dice
2 tbsp beef flavoured soup base
ground black pepper
water to cover
NB: amounts are approximate and are for a 4 litre crock pot. If yours is bigger or smaller adjust as needed.
Place all ingredients in crock pot and cook on high 3 hours then on low all day or over night until beans and barley
are tender. Adjust seasoning to taste. Serve with crusty
