Polynesian Short Ribs

3 pounds short ribs
3 medium onions, quartered
1/2 cup firmly packed brown sugar
1/2 cup white vinegar
1/4 cup soy sauce
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
3 green peppers, seeded and cut in thin strips
1 can (20 oz) pineapple chunks with liquid
3 Tablespoons cornstarch


Place short ribs and onions in slow cooker; add enough water to cover. Cover and turn heat controls to HIGH; cook 3 hours. Drain liquid.

Add remaining ingredients except pineapple and cornstarch. Cover and turn heat control to LOW; cook 5 to 6 hours.

Make a paste of pineapple juice and cornstarch; stir into rib mixture. Add pineapple chunks. Cover. Turn heat control to HIGH; cook 15 minutes longer. Makes 4 to 6 servings.
