3 pounds Pork loin
1 large onion -- sliced 1 Granny Smith apple peeled and sliced
1/2 cup apple juice
salt and pepper -- to taste
2 russet potatoes (can add more or less) -- peeled and quartered
1 bag sauerkraut -- undrained


Season pork with salt and pepper then brown it on top of the stove. After its nice and browned all over add half the onion to the bottom of the crock. Set roast on top of onions, add apples, the rest of the onion, potatoes, and the kraut. I like to pour the apple juice in the pan I browned the roast in and then scrape up any browned bits left in the pan. Pour over roast. Cover the crockpot and turn on low. I let it cook about 6-8 hours and check it at 6, if it isn't done put it back in and let it cook another hour or two.
