Mimi's Tropical Pork
6 c. banana/orange/pineapple juice
1/3 c. ketchup
3 T. soy sauce
2 T. lemon juice
2 T wine vinegar
1 T. olive oil
2 T brown sugar
4 lbs. boneless pork strips
2 mangoes, peeled, pitted, coarsely chopped
Mix liquids and sugar, bring to a boil. Reduce heat and simmer 5-10 minutes to reduce.
Place pork strips in a crockpot, top with mangoes. Pour hot liquid over meat in crockpot. Cover and cook on high for 1 hour, then reduce to low for 5 hours. Serve over basmati rice
If you need more liquid, you might want to double that part of the recipe. If you want to make it in the oven, bake it uncovered at 325F until the meat is tender and begins to fall apart. Or you can make it on the stove top in a covered Dutch oven...simmer for at least two hours, then test every 30 minutes until done.
