Chicken vegetable soup (crockpot)
6 large potatoes peeled and cut up to bite size
6 med carrots peeled and cut to bite size
1/4 cup chopped onion
1-2 pounds boneless skinless chicken cut in bite size pieces
3 cups hot water
1 1/2 cups chicken broth (or one chicken flavoured bouillon cube dissolved in water)
1 1/2 teaspoon salt
1/4 tsp pepper
1/2 tsp thyme
While you are cutting up chicken and veggies have your crock pot heating. On low heat. <
Layer potatoes, carrots and onions in the cooker.
Lay the chicken on top of the vegetables.
Stir the next five ingredients in a bowl and then pour it over the chicken Cover and cook on low heat for 9 to 10 hours
