Healthy Butter
1 cup real unsalted butter, at room temp.
1 cup -minus 2 T canola oil
2 T extra virgin olive oil
2 T buttermilk
1/4 tsp Kosher salt
1/4 tsp. lecithin granules (available at Nutrition centers) This helps bind the ingredients, and is important to use
Place all in food processor and process until smooth. Pour into a container and refrigerate. Makes a little more than 2 cups. Even cold it will spread. It liquefies if left out too long, but will solidify when refrigerated.
