Homemade Ricotta
2 quarts milk, either whole or part skim
1/4 cup fresh lemon juice
Mix milk and lemon juice. Allow to sit until clabbered to the consistency that you desire.
Line a colander with moistened cheese cloth, place over a bowl and put in ricotta until well drained. You may have to break up a few of the bigger clots.
