Swiss Cheese Fondue

1/1/2 cups shredded Gruyere Cheese
1 1/2 cups shredded Jarlsburg Swiss Cheese
2 T flour
1 clove garlic,halved
1 1/4 cup dry Chablis or chicken vegetable stock
dash of pepper White
3 T Brandy Optional


Toss cheeses with flour to coat well. Rub inside of warm wok or fondue pot with the cut side of the garlic to flavor. Pour in wine or stock and heat until small bubbles rise to top. Do not let wine or stock come to boil; very low simmer state. Stir in cheese by handful until melted and incorporated. This is a slow painstaking process so take your time and do it slowly. It takes about 20 minutes to do this. Keep cheese gently simmering. Add pepper and brandy. If it is too thick add more stock or wine.

Serve with toasted bread cubes, redskin potatoes, steamed veggies or apple or pear wedges for dipping.
