Coconut Ice Cream
Southern Living-7/98

2 cups milk
4 egg yolk
1/4 teaspoon salt
2 cups whipping cream
1 tablespoon vanilla
1 (15oz) can cream of coconut
1 cup frozen coconut -- thawed


Whisk together first 3 ingredients in a heavy saucepan; cook over medium heat, whisking constantly, 25-30 minutesor until thickened. Remove from heat; stir in whipping cream and remaining ingredients. Cool slightly. Place plastic wrap directly on surface; chill.

Pour mixture into freezer container of a 1-gallon electric freezer, and freeze according to manufacturer's instructions. Pack freezer with additional ice and rock salt, and let stand 1 hour before serving. Yield: 1-1/2 qts
