Irish Coffee Ice Cream
2 eggs beaten
2 cups milk
1 cup firmly packed brown sugar
4 tablespoons instant coffee crystals
1/2 cup Irish whiskey or brandy
2 tea. vanilla extract
2 cups half and half or whipping cream
In a med. pan combine beaten eggs, milk, brown sugar and instant coffee. Cook and stir over med-low heat until sugar and coffee dissolves and mix thickens slightly. Remove from heat; stir in whiskey or brandy. Cool to room temp. stir in vanilla and cream. Pour into ice cream canister and freeze.
