Key Lime Ice Cream Balls

2 pints of good vanilla ice cream (such as Edy’s)
1 Mrs. Smith’s Authentic Key Lime pie, thawed
2 cups coconut
1 1/2 cups macadamia nuts

Soften ice cream in a big bowl. Dump in a thawed pie (crust and all). Stir the two together and dump into a large pan (13x9 works fine). Cover and freeze.

Scoop ice cream/pie combo into whatever size balls you desire (if mixtures becomes too soft, refreeze for an hour or two and then start the process again) Roll balls in toasted coconut and macadamia nuts.Place in container, cover and freeze.

Toasted Coconut and Macadamia Nuts: Mix together about 2 cups of coconut and about 1 1/2 cups of chopped macadamia nuts. Spread them out on a large shallow pan and toast about 9-11 minutes at 350 degrees.
