Mona’s Vanilla Ice Cream

8 junket tablets
11/4 cup cool water
3 qts. Whole milk
2 (12 oz.) cans evaporated milk
1 1/2 cups coffee creamer
2 cups sugar
8 tsp. Pure vanilla


Place junket tablets in cool water and set aside.

Pour whole milk, evaporated milk, coffee creamer, and sugar into a large pan. Warm to luke warm to dissolve the sugar. Add vanilla. Pour the dissolved junket tablet into the milk mixture. Stir only twice and pour into freezer. Let sit for 10 minutes and then let cool for a few minutes with ice on the cream. Freeze according to your freezers directions. Use lots of salt

When done, wipe off the lid, take out the dasher and push down the cream on the sides and then put wax paper over the top. Put the lid back on and cover with ice in a bag and let sit for an hour or 2.
