Ice Cream: Pina Colada Ice Cream

Pina Colada Ice Cream

6 large eggs
1 1/2 cups granulated sugar
5 cups whole milk
1 (10 oz.) can frozen pina colada mix, thawed
2 cups half and half
1 cup whipping cream
1/2 cup light rum*
Strawberries (optional)


* Use caution when adding additional amounts of alcohol. Alcohol lowers the freezing temperature which will prevent the mixture from freezing.

Whisk together eggs, sugar and milk in a large saucepan. Cook over medium heat for about 10 minutes, whisking constantly. Remove from heat and cool.

Stir in pina colada mix, half and half, whipping cream and rum. Pour into a one gallon container of ice cream maker. Freeze according to manufacturer's instructions. Let freeze for additional hour. Ice cream will be soft. Garnish with strawberries and serve.

Makes: 1 gallon
