Mock Sour Cream

Mock Sour Cream - an egg free mayonnaise

1/2 cup pecans or raw cashews
1/2 cup unsweetened soy milk or water
1/2 tsp. salt
1/2 cup vegetable oil
4 tsp. apple cider vinegar or lemon juice
1/4 tsp. onion powder
1/4 tsp. garlic powder


Place nuts in a blender and blend to a fine powder. Add soy milk and salt. Blend on high about 2 minutes until very smooth. Very Very slowly add oil through the lid while blender is running at a medium-low speed. When mixture has emulsified, oil is incorporated, add vinegar, onion powder, and garlic powder. Mix well. If too thick, thin with water or soy milk.

Occasionally this recipe emulsifies only to the consistency of thick cream.
