Irish Bread Pudding 
4 eggs 
2 c. milk 
1 c. sugar 
1/2 tsp. vanilla 
1/2 c. raisins (optional) 
2 c. bread, cubed 
hand whipped cream 
Break eggs into large bowl; beat lightly. Add milk; mix well. Blend in sugar, vanilla and raisins. Mix bread cubes into egg mixture until bread is well soaked. Pour into greased baking dish ( 8 x 8 x 2-inch pan); cover with foil. 
Bake at 350 degrees until done, about 90 minutes. Serve with hand whipped cream. Serves 6 to 8.
