Bread Pudding


4 large slice firm white bread or 6 regular size
2 cups milk or milk and cream
4 eggs
1/2 -3/4 cup sugar
pinch salt
2 tsp vanilla
1/2 cup raisins
cinnamon


Cut or break bread into 1-inch cubes and place in 8" baking dish. Sprinkle with raisins.

Scald milk. Beat eggs lightly with sugar, vanilla, and salt. Beat in scalded milk, just enough to mix. Strain

over bread. Push bread down into custard a few times so that it soaks it up a bit. Sprinkle with cinnamon.

Cover loosely with foil. Bake in a water bath at 350' for about 1 hour. Remove foil last 15-20 minutes of baking.

Variation: Use lesser amount of sugar, lemon peel instead of vanilla, omit cinnamon, Use dried cherries instead of raisins. 
Sprinkle with coarse sugar after removing foil.
