Blackberry Buckle with Blackberry Sauce

2 cups flour -- plus 2 T
2 teaspoons baking powder
1 1/4 teaspoons salt
4 tablespoons unsalted butter -- softened
3/4 cup sugar
1 egg
1/2 cup milk
1 pint blackberry
4 tablespoons unsalted butter -- softened
1/2 cup sugar
1/3 cup flour
1/2 teaspoon cinnamon
1 cup blackberry
5 tablespoons sugar -- superfine
1 tablespoon lemon juice
1 tablespoon creme de cassis -- or blackberry
liqueur
whipped cream -- flavored with
blackberry brandy or creme de cassis


Preheat oven to 375. Grease an 8" round springform pan. Set aside.

Sift together 2 c flour, baking powder and salt. Set aside. Cream butter and sugar until fluffy, about 3 minutes. Beat in egg, then add flour mixture in 3 parts, alternating with milk.

Toss beries with remaining 2 T flour to separate and scatter them evenly through the dough. Fold in. Pour batter into prepated pan.

For topping: Combine unsalted butter, sugar, flour and cinnamon with a fork to make a crumbly mixture. Sprinkle this over the batter.

Bake for 1 hour. If cake tester does not come out clean, bake for another 5-10 minutes. Let cake cool.

For sauce: while cake is baking, sprinkle blackberries with sugar and refrigerate for about 1 hour.

Puree in food processor with lemon juice and creme decassis.

Run knife around edges of cake and release sides of pan. Serve with blackberry sauce and whipped cream.
