Scrumptious Chocolate Dessert
7 oz good quality bittersweet chocolate (such as Lindt)
1/4 lb butter
7 large eggs separated
1 cup sugar (3/4 c. and 1/4 c.)
1 tsp. vanilla
1/2 tsp. cream of tartar
1 pint heavy whipping cream
1/3 cup sugar
1 tsp. vanilla
Preheat oven to 350 degrees F.
Over double boiler, melt chocolate and butter, stirring thoroughly. Off heat.
Beat the seven egg yolks with 3/4 cup sugar for five minutes, no cheating. Gradually add the warm chocolate and butter mixture along with the vanilla.
Beat egg whites with cream of tarter and 1/4 cup sugar until stiff. Fold whites into chocolate mixture.
Pour 3/4 of the batter into a 10" springform pan. Cover and refrigerate the rest of the batter. Bake 35 minutes. Cool and leave in pan. Stir refrigerated batter then spread on top of the baked cake.
Whip the cream, sugar and vanilla until firm. Spread on top of the first two layers until the whipped cream is even with the top of the pan. Refrigerate until firm. Remove springform ring, and serve.
Please note that this does include raw eggs, so if you live where salmonella is a problem, take precautions
