Cherry Clafouti
  
3 eggs 
4 tabs caster sugar (fine sugar) + extra for dusting 
4oz (125g) flour, sifted 
1 teaspoon dried yeast 
milk 
1 lb (500g) cherries (pitted and with stems removed) ... or equivalent of preserved/ bought in jar/can cherries* 
 
Beat eggs and sugar together. Slowly add flour, then the yeast. Mix well. Add enough milk to make a smooth but not too thin pancake batter. 
Butter a flan dish and pour in the batter. Top with the cherries. 
Bake in a hot oven (425F/220C) for 30-45mins. The cake will be done when golden brown and when a knife pushed into the middle comes out clean. Dust with fine sugar and serve either warm or cold.    
*The imported jars or cans of cherries are usually pitted by machine. It is not always 100% successful. 
Check them yourself prior adding or warn family/guests to "chew carefully". Don't want anyone to lose a tooth or filling!
