Ma Bell's Peach Cobbler

1 quart strawberries, stem
3 cups flour
1 cup self rising flour
1 cup shortening
1 teaspoon salt
15 medium ripe peaches
2 cups sugar
1 stick butter, cut into small pieces
1 cup buttermilk


Combine flour, Crisco and salt in a large mixing bowl. Mix until crumbly. Slowly add buttermilk and blend to form a soft dough. Pinch off about a 3-inch bowl. Roll out oblong on a floured board and cut in two long strips. In a 2-quart, oblong Pyrex dish about 3 inches deep), place strips around (edge of) dish with even strips going around the top of the dish. Do not cover bottom of dish with crust.

Add half of the peaches; sprinkle 1 cup of the sugar on the peaches. Take half of the margarine and place small pieces on top of peaches and sugar. Pinch off another 3-inch piece of dough; roll out and cut into strips. Place crisscross on top of peaches. Spoon remaining peaches into dish. Add remaining sugar and butter as before. Roll out remaining dough, oblong, and place over entire dish to cover. Cut off any extra dough around the edges. Pinch dough around edges to secure. Cut small slits in dough for steam to escape. Bake in 300F oven for 2 hours.
