Peach Cobbler
1 lg can sliced peaches (drained)
1 T. lemon juice
1 t. baking powder
3 T. butter
1/2 C. milk
1 C. boiling water
1 t. cinnamon
1 C. flour
1/2 t. salt
1 1/4 C. sugar
1 T. cornstarch
Preheat oven to 350° F and grease a 9 inch square pan, line bottom with peaches.
Sprinkle with cinnamon and lemon.
Mix flour, salt and baking powder together and set aside.
Cream butter and 3/4 cup sugar together.
Add dry ingredients alternately with milk.
Spread batter over peaches.
Combine remaining sugar and cornstarch and sprinkle over batter.
Pour 1 cup boiling water over batter, slowly.
Bake at 350 degrees in preheated oven for 1 hour.
