Chocolate Eclair Dessert

whole graham crackers
2 (3 ounce) pkgs. French vanilla instant pudding mix
3 cups milk
8 oz. Cool Whip LiteŽ
Icing:
1/2 cup margarine or butter
1 1/2 Tablespoons baking cocoa
5 Tablespoons milk
3 cups powdered sugar
1 teaspoon vanilla extract
Make a layer of whole graham crackers in the bottom of a 9x13 pan.
Prepare the pudding mix using package directions with the 3 cups milk. Fold in the Cool Whip. Pour over graham cracker layer.
Arrange another layer of whole graham crackers over pudding mixture.
To make icing, combine margarine, cocoa, 5 T. milk in saucepan. Bring to a boil, stirring constantly; remove from heat. Add powdered sugar and vanilla extract. Beat with electric mixer until thickened.
Pour over the layer of graham crackers.
Chill at least 8 hours before serving, preferably overnight to soften the graham crackers. Cut into squares and serve.
NOTES : A can of chocolate frosting can be substituted for the homeade icing, but it's definitely worth the trouble to make it from scratch.
