Pineapple Cream Squares

Base: 2 1/2 cups vanilla wafer crumbs
1/2 cup butter
1 1/2 cups icing sugar

Filling:
2 eggs, beaten
juice and rind of 1 lemon (chop rind finely)
1 tablespoon white sugar
1 tsp. vanilla
1/8 tsp. salt
1 (20 ounce) can crushed pineapple (drained)
1/2 pint cream (whipped)


Cream butter and sugar together; add wafer crumbs, mixing well. Press into an 8 x 8-inch baking pan. Bake at 325 degrees F. until golden brown.

Thoroughly blend eggs, lemon, sugar vanilla and salt; stir in pineapple. Spread pineapple mixture over base and top with whipped cream.

Optional: If you want that extra litte pineapple zip fold the juice in (about 2 tbsp) after the cream has been whipped. If desired, sprinkle with toasted pineapple.

Chill until firm.
