Espresso Brûlée In A Cinnamon Fillo Cup Drizzled With Caramel

Fillo Cup Ingredients:
6 sheets fillo dough
1/4 cup sugar
1/4 tsp. cinnamon
1 cup butter, melted

Brûlée Ingredients:
12 egg yolks
3/4 cup sugar
1 Tbsp. flour
1-1/2 cups heavy whipping cream
2 Tbsp. espresso grounds

Caramel Sauce Ingredients:
1/2 cup granulated sugar
1/4 cup water
1 cup heavy whipping cream


For fillo cups, mix together cinnamon and sugar. With a pastry brush, lightly coat between each layer of fillo dough with butter and then sprinkle with sugar mixture. After completing 6 times, cut into 4 squares.

Drape over 4 drinking glasses. Cook in 350-degree oven for approximately 12 minutes. Pull off glass and continue to cook until fillo is completely golden brown. Set aside to cool.

To make the brûlée mixture, whip together egg yolks, sugar and flour in a bowl until a ribbon forms. In a saucepan, just slightly heat cream and espresso grounds. Slowly pour heated cream in with egg mixture.

Put egg mixture bowl over a pot of boiling water nd continue to stir for 12 to 15 minutes or until mixture becomes thick. Pull off heat and cool in a shallow pan in the refrigerator.

For the caramel sauce, bring sugar and water to a boil in a saucepan on medium heat. Cook until sugar mixture starts to turn golden brown. While the mixture is cooking, warm up cream just slightly in another pan. Pull sugar mixture off stove and carefully stir in warmed cream. The mixture will boil slightly until all of the cream has been stirred in. Set aside and let cool. Mixture will thicken as it cools.

Fill bottom of fillo cup with fresh berries. Scoop brûlée over berries and drizzle caramel sauce over plate and fillo cup. Garnish with fanned strawberries and fresh mint.

Serves 4.
