Apple Maple Crisp

8 tart-sweet apples,peeled, cored, and sliced
1/4 cup maple syrup
1/2 tsp. ground cinnamon
1/2 cup flour
1/4 cup whole wheat flour
2/3 cup packed dark brown sugar
6 tbl. unsalted butter, cut into bits
1/2 cup rolled oats


Preheat oven to 375 degrees. In a 9x13 baking dish, toss apples with the maple syrup and 1/4 tsp. cinnamon.

In a medium bowl, combine the flour, whole wheat flour, brown sugar, remaining 1/4 tsp. cinnamon and the butter. Pinch and rub between your fingers until the mixture is blended to the consistancy of very coarse meal. Add the rolled oats and mix well. pinch together bits of this topping and scatter it over the apples.

Bake 45 minutes, or until the apples are tender and the topping is browned and crisp.
