Fruit or Berry Crisp
(Foodwine recipe request)
1 c. white sugar
1/3 c. flour
2 qts. (8 cups) fresh fruit (cut up) or fresh berries
1 c. flour
1/2 c. oatmeal, reg. or instant
1/2 c. brown sugar, firmly packed
1/2 c. white sugar
1/2 c. margarine, melted and cooled
dough for 1 pie crust
In a large bowl combine the 1 cup white sugar and 1/3 cup flour. Add fruit and mix well.
Spoon into a greased 13x9x2 inch baking dish.
In the same bowl combine the 1 cup flour, oatmeal, the two sugars and
with a pastry blender cut in the margarine until the mixture
is crumbly.
Sprinkle these crumbs over the fruit mixture.
Meanwhile prepare a pie crust mixture approximately enough
for one scant crust.
Roll this out and cut out rounds using a glass and cut these in half for half moon. Place 12 on the crisp - 3 across and 4 down to serve for 12.
Bake at 375 degrees for 40-45 minutes or until fruit is tender. Serve warm.
