Zucchini Crisp

5 cups zucchini
1/3 cup sugar
1 teaspoon cinnamon
1/4 cup lemon juice


Zucchini needs to be peeled, seeded and cut into slices to resemble apples.
Cook the first zucchini in saucepan with water for 10 minutes or until the zucchini slices become translucent. Drain.

Sprinkle with sugar, cinnamon and lemon juice, put in a 9 x 13 pan with minute tapioca in bottom (sprinkle a bit in the bottom). Arrange the slices over the tapioca evenly

Mix following until crumbly:
1/3 cup butter or margarine
1/2 cup brown sugar
1/2 cup flour
1/2 cup oatmeal (quick cooking)


Sprinkle over fruit slices. Bake at 45 minutes at 350'.
