Zucchini Crisp

1 large zucchini
1/2 c. lemon juice
1/4 c. water
1 tsp. nutmeg
1/2 c. sugar
2 tsp. cinnamon
1 1/3 to 1 1/2 c. firmly packed brown sugar
1 c. flour
1 c. rolled oats
2/3 c. soft butter
Whipped topping or ice cream (optional)

Preheat oven to 375. Grease 9 x 13" pan and set aside.

Peel zucchini; remove seeds. Slice to look like apple slices (8 cups). Place zucchini and lemon juice/water in large saucepan. Cover and cook until tender (15 minutes). Add nutmeg, sugar and cinnamon and cook until sugar dissolves. Remove from heat. Pour into greased prepared pan.

Mix brown sugar, flour, oats and butter until crumbly. Sprinkle mixture over zucchini.

Bake 45 to 50 minutes or until top is golden brown. Serve with ice cream or whipped topping.

Makes 12 to 16 servings.
