Chefshell's Tart Apple Crisp

3 lbs. cooking apples (Granny Smith, Braeburn, etc...)
1 1/2 tbsp. freshly squeezed lemon juice
1/2 cup raisins (golden or dark)
1/2 cup chopped walnuts (Pecans work too)
1/2 cup flour
1/3 cup packed dark brown sugar
1 tsp. fresh ground cinnamon
1/2 tsp. fresh ground nutmeg
1/2 tsp. ground ginger
4 tbsp. unsalted butter, cut into 1/4 inch pieces


Peel, core, and cut apples into 1/2 inch thick slices. Place slices in a 1 1/2 qt. baking dish; toss with lemon juice (and brandy) to coat.

In a bowl, mix walnuts, raisins, flour, brown sugar, cinnamon, nutmeg, and ginger. Add butter, blend with fingertips until mixture resembles coarse crumbs. Sprinkle crumb mixture over the apples. Cook in a 350 degree oven for 20 minutes or until mixture is bubbly.
