Creme Brulee

1 liter milk
7 tblspoons sugar
5 egg yolks
2 tblspoons cornstarch
lemon and orange gratings
cinnamon sticks.

Put milk, cinnamon sticks, gratings of lemon and orange to boil. Let barely simmer for a couple of minutes. Let cool a little.

Put in bowl the sugar, egg yolks, cornstarch, mix well, and then add, straining, the warm milk, mixing the while. Put this on the fire, and bring to a simmer while beating with a whisk, it will thicken quickly.

Once thickened, take out of fire, put pot in cold water and let cool always stirring it so it does not form a thick cover. Once cool it won't. Put in refrigerator, and before serving sprinkle with sugar and burn this sugar with a hot iron. This is the "brulee".
