Mini Fruit Pizzas
1 Tube refrigerated sugar cookie dough
1 (8 oz) package of cream cheese
1/2 Cup powdered sugar
1 tsp. vanilla (preferably clear)
Fruit for topping
Cut the dough into circles at one-and-a-half hash marks. (Make the cookie half again thicker than the official instructions tell you.)
Put the cookies on the baking sheet at least one inch apart so that they can rise and spread into perfect circles. Bake cookies as instructed -- don't add any extra time and do not let them brown; if anything, let them be slightly underdone. Let cool thoroughly. At this point you can freeze the cookies or store for several days in sealed container if you like.
Beat together the cream cheese, sugar, and vanilla until fluffy (or use any other fruit pizza topping you like), then decorate with fruit.
