Buttermilk Doughnuts

2 eggs
1 cup granulated sugar
1/4 cup cooking oil
1 tea. vanilla
4 cups all purpose flour
4 tea. baking powder
3/4 tea. salt
1/4 tea. baking soda
1 cup buttermilk
fat for frying
sifted powdered sugar (optional)
In large mixing bowl beat eggs until thick and lemon colored. Add the gran. sugar and beat until smooth. Stir in
oil and vanilla.
Throughly stir together flour, baking powder, salt and soda. Add to egg mixture alternately with buttermilk. Turn out onto a ligthly floured surface and roll to 1/2 inch thickness.
Cut dough with floured doughnut cutter.
Fry in deep hot fat 375 deg. until golden brown, about 3 minutes, turning once. Drain on paper toweling.
Serve plain or sprinkled with pdr. sugar.
About 24 doughnuts.
