Dutch Christmas Doughnuts

1 envelope dry yeast
3/4 cup warm milk
1/2 tsp. sugar
2 cups flour
2 Tbls. sugar
1/8 tsp. salt
2 eggs, beaten
2/3 cup each chopped apple and raisins
1/4 cup minced candied fruits
1 Tbls. grated lemon rind


Mix together the yeast, milk and sugar and let sit for 10 minutes.

Combine the flour, sugar, salt with the yeast mixture and add the rest of the ingredients. Mix well with a fork. Cover the bowl with a towel and let the dough rise in a warm place for about 1 hour.

Form the dough into balls and drop into a kettle of hot, deep fat (350*) and fry 3 minutes on each side. Drain on paper towels and then sprinkle with powdered sugar. Makes 2 dozen.
