Pumpkin Doughnuts
1 c. sugar
1 c. pumpkin puree
4 Tbsp. plain yogurt
2 Tbsp. melted shortening
2 eggs
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
4 1/2 c. flour (1/2 white, 1/2 whole wheat)
cinnamon and sugar
powered sugar
fat for frying
In large bowl mix together sugar, pumpkin, yogurt, shortening and eggs. Combine dry ingredients and add, beating well, chill.
Roll out on floured board 1/2-inch thick. Cut with doughnut cutter.
Heat fat to 375 degrees, drop doughnuts into fat and cook until deep brown, turning once. Drain on paper
towels and dip into cinnamon and sugar mixture or powdered sugar. Makes 2 dozen doughnuts.
